You don’t have to be Italian to know a great fish stew when you see one. Zuppa di pesce is thick, hearty, bold, and zesty. It takes time (about an hour), but it’s worth every minute. Feel free to substitute your favorite fish and shellfish. Serve with crusty whole grain bread, a simple salad, and a glass of wine. Tips: If you can't deal with the clams, skip Steps #1 and #2; then use ¾ cup white wine in place of the steaming liquid in Step #5. It will still be dynamite. Also, avoid Atlantic halibut if possible. Pacific halibut, striped bass, or tilapia would be a more eco-friendly choice. And finally, we serve this stew in shallow bowls, but the seafood isn't swimming in liquid; it's lightly sauced. For a soupier version, increase all non-seafood ingredients by 50%, and bring the liquid level in Step #2 to slightly more than 1 cup.
