A pizza inspired this dish. Weird, but true. We loved the flavors, but not the rest; so we took the goodies off the dough and turned them into a classy appetizer (or dessert). Fresh figs have a short season, so get ‘em while you can. Buy as close to serving as possible and keep refrigerated. (They’re highly perishable.) Wash just before broiling. If you prefer, you can cut the sage into micro-thin strips (chiffonade) instead of chopping it. But any way you cut it, don’t over-do it. A little sage goes a long way. Tip: If you don’t have good balsamic around, you can improve yours by simmering it until syrupy. Directions are in Step #1.
