This luxurious and elegant soup has a split personality: If you only puree half, you'll see its rustic side. For the fine-dining look, process until smooth and garnish with fresh chives. To go casual, leave it chunky and add cooked reduced-fat sausage at the end of Step #4. Use vegetable broth for a vegetarian version. Tip: You'll need 6 to 8 medium purple-tops or 2 large Macombers for 2½ pounds.
