Sesame Slaw with Pea Pods
In case you haven’t noticed, we’re way into slaws, and we love this one. It’s quirky, colorful, crisp, and sweet. Snow peas, bean sprouts, and daikon give it an Asian flash. Since Chinese sesame paste can be hard to find, we use tahini instead. Serve with Sea Scallops over Mushroom Shirataki or any simple grilled meat, poultry, or seafood. To turn it into a complete vegetarian meal, add some tempeh or tofu. For meat-eaters, top with cooked shrimp or chicken.
Per serving: 130 calories, 8 g total fat, 0 g saturated fat, 0 mg cholesterol, 12 g total carbohydrate, 3 g dietary fiber, 6 g protein, 123 mg sodium.
