I have a few favorite “go to” meals in my arsenal. I am lucky that these same meals are also included in my large family’s list of favorites. The Cauliflower Soup with Moroccan Spices is now added to that collection! The smell of just the celery and onions cooking was enough to entice me—then add in the array of spices and vegetables sold me. I love the idea of this soup even, such a simple thing to prepare and the result was an exotic dish that would impress anyone. Vegetables, broth, spices and tofu—such a little calorie cost, too! I can’t wait to make it again. On my next venture with this dish I will use a vegetable broth so it is a more vegan dish. All in all—LOVE!
