If you’re looking for complex flavors, you’ll find them in this warm salad: smoky sausage, tangy mustard, sweet maple syrup, and tart vinegar. The beans and veggies give the texture plenty of interest too. Reheated briefly in the microwave, leftovers are great the next day. Serve with Broiled Salmon with Grainy Mustard Glaze or simply prepared poultry or pork. Tip: French green lentils can replace the more humble brown ones, but the cooking time may be different. (Red and golden lentils won't work.) For best results, the lentils should be slightly "al dente." Don't let them become mushy.
