Even though we skip the elegant skewers of classic robatayaki, this dish still packs plenty of Japanese flavors. The more-or-less whole chicken thighs and veggies have no trouble soaking up the salty-sweet marinade. They're tastiest cooked on a grill, but you can get pretty good results with a broiler. Tips: Look for organic, pasture-raised, or antibiotic-free chicken. Always clean your cutting board and wash your hands thoroughly after handling raw poultry. If spring onions aren’t available, use red onions instead. Finally, to clean the mushrooms, either brush with a mushroom brush or rinse briefly under cold running water and pat dry.
