This nouveau Southern recipe features double-peached pork chops. They’re brushed with a peach-mustard glaze and surrounded by the luscious warm peachiness of grilled fresh fruits. For best results, choose chops of uniform thickness. During grilling, move them around from hotter to cooler spots to get the right amount of heat where you need it. If the fire’s too hot, they’ll burn outside and stay raw inside. You want to make sure they're cooked through along the bone. If you're grill-less, use your broiler. Great sides include Mashed Sweet Potatoes with Marsala and Rosemary, Mashed Butternut Squash, Turnip “Fries," and Simple Grilled Beets. Tip: Pasture-raised pork is the most eco-friendly choice.
