Even though I’m a dietitian, there are still some vegetables that I’m learning to love, such as Brussels sprouts. Exploring different preparation methods is one of my favorite ways to try new foods; I’m glad I decided to give Brussels sprouts a second chance. Roasted Brussels Sprouts and Eggplant with Garlic is a very simple but delicious way to incorporate these cruciferous, nutrient-packed vegetables into your eating lifestyle.

When I prepare vegetables, I make sure to thoroughly clean them before using them (especially if they are not organic).

After cleaning and chopping the vegetables, I mixed them together with garlic and olive oil. I also added a little salt and pepper for flavor.

I loved the taste of the garlic against the slight sweetness of the maple syrup. The simple preparation made this recipe one I know I will make again.

All in all, a very simple but flavorful side dish that will make a Brussels sprout lover out of the most resistant vegetable hater.
