Normally, this curry would call for garam masala, a classic Indian spice mix. Since you may not have a stash of g.m. lying around, we've imitated it here with a blend of cumin, bay leaf, black pepper, cardamom, and—of all things—pumpkin pie spice. Standard p.p.s. contains cinnamon, ginger, allspice, and nutmeg—which makes it a “warm spice” cousin of the real thing. If you happen to have g.m., substitute ½ teaspoon for the cumin, p.p.s., and cardamom in the recipe. On the side, try Coconut Rice, Simple Snow Peas, Turnip “Fries,” Roasted Root Vegetables, Broiled Summer Squash with Roasted Pepper Oil, or Roasted Spiced Cauliflower. Tips: Look for organic, pasture-raised, or antibiotic-free chicken. Always clean your cutting board and wash your hands thoroughly after handling raw poultry.
