In New England, bowls of “chowdah” bulge with butter and cream, and this skinny version would be considered an outrage. Still, it’s a tasty soup full of tender cod, smoky bacon, and sweet onions. A secret ingredient (pureed silken tofu) adds body and creaminess, and a sprinkling of parsley gives it a bright, fresh finish. It really hits the spot on blustery fall day or whenever there’s a chill in the air. To turn it into a complete meal, add a green salad and some whole grain bread. Tip: The most eco-friendly types of cod are U.S. Pacific and U.S. Gulf of Maine hook-and-line. Try to avoid Atlantic trawl cod.
