You'll want the hulled/split ones for this recipe. (They actually look more orange than red.) Cooking times for red lentils can vary widely, so don't be shocked if they take less or more time than indicated. Also, the artichokes aren't essential. Some of us even like the dish better without them. Look for organic, pasture-raised, or antibiotic-free chicken. Always clean your cutting board and wash your hands thoroughly after handling raw poultry.
