When it comes to greens, chard is the queen, and it’s got flavor to match its looks. We think the crisp, sweet stems are the best part. They need a little more time than the leaves, but our tag-team approach allows you to cook them together. This dish is great for entertaining because you can do the blanching the day before and then throw everything into a skillet just before serving. We love it with Shellfish in Spicy Carrot Juice, Roasted Pork Tenderloin with Port Wine Reduction, Grilled Indian Chicken Thighs with Spicy Red Sauce, Porcini-Crusted Beef Tenderloin Steaks, or almost any simple meat or poultry dish. If you’re pressed for time, try the simpler (and spicier) version. Tip: One batch yields 4 generous servings or 6 smallish ones.
