In this ridiculously easy salmon recipe, tangy mustard and tart vinegar balance the richness of mega omega-3s. A touch of maple syrup adds just enough sweetness. Aside from salt, pepper, and oil, you need only 4 ingredients and a fraction of your brain to make it. Serve with Maple Mustard Lentils with Sausage, Simple Grilled Beets, Broiled Summer Squash with Roasted Pepper Oil, or Warm Bulgur Wheat with Vegetables, Chickpeas, and North African Spices. Tip: If you’re buying maple syrup for cooking (as opposed to drizzling over pancakes), get Grade B. It’s got intensity and depth that Grade A never dreamed of.
