Broccoli with Bacon, Red Onion, and Cheese

If bacon and cheese work magic on burgers, what can they do for broccoli? Plenty! Roasting mellows the unruly crucifer and coaxes some natural sweetness out of it. Then bacon and cheese add the smoky-salty-nutty-gooey thing we all know and love. Broccoli never had it so good. For the path of least resistance, use pre-cut florets, which are available in most supermarkets. If possible, cook your own bacon. If you can’t, grab the packaged kind. Serve with chicken, turkey, or beef.
