Braised Chicken with Sausage and Peppers

This simple sauté of chicken and peppers is an open ticket until you add the sausage. Linguiça takes you to Portugal; chorizo, Spain; kielbasa, Eastern Europe. Andouille and a dash of Tabasco drop you off in New Orleans. Serve with brown rice or whole wheat orzo. Add a salad to complete the excursion. If you crave something more on the side, try Roasted Garlic Asparagus, Roasted Garlic Green Beans, or Broiled Summer Squash with Roasted Pepper Oil. Tips: Look for organic, pasture-raised, or antibiotic-free chicken. Always clean your cutting board and wash your hands thoroughly after handling raw poultry.
