Craving something rich, creamy, and blue-cheese-y? Try this slimmed-down version of the classic you know and love. Spoon it over frosty iceberg wedges or crisp chilled romaine. It's also delicious on baby greens with sliced apples and pears. Add a pinch of cayenne pepper and use it instead of crumbled blue cheese on our Buffalo Chicken Salad. Tips: One recipe makes 16 (2-tablespoon) servings. For a bigger batch, just increase everything proportionately. If you like it super-thick, decrease the milk.

I think I’m addicted to blue cheese dressing! Most of them are too thick and fattening, but this one is much lighter in consistency and calories!
