Need a fancy spring or summer appetizer? This one showcases a gem. Artichokes are work, but worth it, and the demo will take you through the process step by step. The creamy dipping sauce can be used on pan-seared scallops (see Seared Scallops with Briny Tartar Sauce) or salmon (try Foil-Roasted Salmon without the H-D Sauce). It’s also tasty with Panko-Crusted Cod, if you use plain panko rather than Italian-style. Just so you know: “brine” is the liquid in jars of cornichons or capers.
